Soup Recipe

From Mondays to Fridays, during this cold winter, Gudrun's delicious soups warm the hearts and tummies of our guests in our Owl's Haven Restaurant. I thought it a good idea to share one of our favourite recipes... Our very own Cream of Broccoli Soup... Enjoy!
Cream of Brocolli Soup topped with Feta
50g Butter/Margarine
500g Broccoli (cut into chunks)
1 Onion (chopped)
5ml Crushed Garlic
Saute onion, garlic and add broccoli. Stir occasionally.
Redu & simmer for 15 - 20 minutes until brocolli is tender. Stir occasionally.
Transfer mixture to food processor & process until fine. Set aside.
50g Butter / Margarine
60ml Cake Flour
750ml Chicken Stock
500ml Milk
0.5ml Nutmeg
125ml Cream
200ml Feta Cheese
Black Pepper & Salt to taste
Parsley to garnish
Melt butter, add cake flour and stir. Add stock & milk. Stir until mixed thoroughly.
Add nutmeg, pepper & salt. Add broccoli mixture & stir over moderate heat until heated through.
Add cream & sherry before serving. Top with feta cheese & parsley.
Mmmm.... Enjoy!
